Dans une démarche globale de communication et transfert
La méthodologie mise au point à l’occasion des travaux menés sur ces procédés sera présentée à tous les secteurs de l’industrie agroalimentaire. Les résultats ont donc vocation à être diffusés le plus largement possible par le biais de communications et/ou de publications selon différents canaux (ex : colloques, articles, etc.). Un transfert des connaissances sera effectué au secteur industriel. Les résultats de ces travaux aideront les professionnels à optimiser leur procédé, et concilier toutes les contraintes inhérentes à la production.

Un symposium de restitution
Il sera organisé en fin de projet (2011) à destination des divers acteurs professionnels, c’est-à-dire les industriels de charcuterie salaison, la restauration collective, les concepteurs et fabricants de matériels, les fédérations professionnelles concernées. Il aura pour objet de présenter les résultats et les possibilités de réingénierie qui en résultent dans le domaine agro-alimentaire et de la restauration collective.
