The case-studies
Building a modelling methodology appears pointless if disconnected from real-world processes. This is why this methodological approach will be based on two main case studies. These de novo case-studies will be conducted with data gathered during the project:
- Listeria monocytogenes in diced bacon, and
- Clostridium perfringens in prepared dishes served in catering.
- Bacillus cereus in two REPFEDs,
- L. monocytogenes, Staphylococcus aureus in cheeses.
Nevertheless, we also aim to achieve a generic methodology, which may be adapted to any process. This will then also be applied to other case-studies for which data and/or models will have been finalised in other contexts (including in-progress projects already financed by the French National Agency for Research):
